Editor’s Note: Many of the paradores also have restaurants featuring delightful local specialties that enhance ant stay on the island. Puerto Rico is a remarkable island with an endless list of vacation possibilities. Anytime of year it is enchanting. Not to be missed. Not far from Bosque de Guanica is the quiet fishing village of La Parguera. Yes, there is a charming parador on the bay not far from the magical Phosphorescent Bay where millions of luminescent dinoflagellates dance when the water is disturbed. It makes a night swim under the stars also seem like a swim with the stars. The best time to take an excursion to these waters is when there is no moonlight. It is a natural phenomenon that is both eerie and quieting.
